Currently the backups overnight have a higher load that during the day. 

I  would prefer a resilver taking 14 days and the system being usable  (3 way mirror) than several hours and not being usable. Although a Saturday morning may be a good time to set things off. It takes a couple of hours to the resilver time scale to sort itself out, but it had 12 hours left this morning after running for 16 hours using default values, on 3TB disk with the pool 75% used. What percentage of data used on the pool did you have for your 2TB resilver to take 7 hours? As the amount of data has a linear effect on the time taken.
