I generally agree with your attitude: for dovecot that is a TALL order, 
and my Windows experience so far is that similar mishaps occur in that 
universe, too.

Down the dovecot road there might be some sort of future setup tool, 
that asks the installing user what she intends to use dovecot for and 
produces some sort of boilerplate conf tree, and asks about what certs 
to use and whetever else seems obvious and asks the user to select one 
config type out of a few.

Today there isn't.
