Good morning,

I'm not sure you can get a decent MATE Desktop running when in 
single-user mode. Quite a lot of stuff in modern(!) desktops rely on 
different sort of internal network-based services, and many of those are 
not started in single-user mode.

What you could do is something like(in sigle user mode):

svcadm disable lightdm  (because sometimes lightdm can actually crash so 
hard that the host reboots)

And then try booting into multi-user. If this works, you should have a 
chance to investigate and maybe figure out what's going on.

You might also want to try changing the virtual display protocol in 
libvirt (virtual machine properties -> channel spice) to VNC.
