I remember Tribblix has Enlightenment GUI available.

Build your own distro.  Others have, and do.

You can start with OI and add your preferred package manager.  You don't
have to use IPS for everything.

Some people use OI for a server without a GUI.  More likely people use OI
with Mate GUI to avoid Windows or Linux.
